Elderflower Cordial




I don't know how I have got to the age of 35 and not made elderflower cordial before. To be honest I didn't know what the elderflower looked like but now that I do, I have seen it everywhere and luckily we have it growing in our garden.



My research says that it is best plucked early on a sunny morning but sadly we are having a meh weather week.


It's the Queens birthday this weekend and we are having a lawn croquet party to celebrate so I wanted to make this to add to some prosecco.I brought in as many bunches as I could reach, you will need around 20 heads to make a litre of cordial.


Never in my life have I used so much sugar for a recipe, this calls for 1Kg!!!!

Simply add 1 litre of boiling water to the sugar and heat to make a syrup. Allow the mixture to cool with a lid on. Whilst it is cooling, make sure there are no bugs in your elderflower heads, dont rinse it as this will affect the taste.




Zest and juice three lemons and add this to the cool mixutre along with the flowers. Make sure the flowers are drenched and then cover the pan and leave for 48 hours.



Once done, drain with a muslin cloth and decant into a sterilised bottle.

Add to prosecco and say cheers to Queenie!
