Beef Wellington

Beef welly is my absolute favourite meal. I think if I was on death row it would be my last supper. Either that or a pizza hut.

I don't make it very often, its a dish that I like to make for special occasions. I wouldn't say it is hard to make, it just requires a lot of prep.

The beef requires more chill time than Snoop Dog on tour.

One of the reasons I love the dish so much is because I think its fun to go to the local butcher and the deli to buy all the ingredients.

Deli shopping to me is more dangerous than Asos.

Its important to get a really good piece of fillet steak. I dont know what the weight is but just ask your butcher to cut you a piece for however many people you are cooking for. This portion was for two people and we had two servings each from it.

As I mentioned that this is a special occasion dish, this requires special occasion booze. Mr Poachie is a beer man but for date nights we love the Chapel Down sparkling rose.

To keep things healthy we had some fresh asparagus from the garden but asparagus is always best served coated in butter and parma ham. Balanced diet and all that.

If you were making this as a showstopper sup sups for guests, leave yourself a few hours to get it all ready. And invest in a food processor. Its a lot of mushrooms to chop up.

My go to recipe is the Gordon Ramsay version. Its never let me down.

Wrap 'n chill, wrap 'n chill

Et voila! Beautiful, succulent and tasty, but enough about me LOL.

Fabulous Beef welly.
