Banana Bread



Are you even in lockdown if you haven't made banana bread? This is my second loaf and whilst I severely dislike bananas I'm happy to eat anything banana flavoured. There is something about their mushy texture I cant stand.

Its super easy to make and is the perfect elevenses snack.

Each time I have made this I have had to adapt the recipe due to what's available in the lockdown larder, so I have made it previously with white chocolate and, this time, dark chocolate. No complaints with either version!

Mr Poachie bought me a set of American cooking cups so that's how I have done the measurements.

Ingredients:

3 ripe bananas
75g melted unsalted butter
1/2 cup of milk
1 egg
1 teaspoon vanilla extract
1 cup sugar
1/2 cup smooth peanut butter
1 teaspoon baking powder
1.5 cups plain flour
150 grams chocolate chips or chopped up chocolate

Method:

Preheat your oven to 170c.
Melt the butter in a saucepan and set aside to cool. 
Peel the bananas into a large bowl and mash with a fork. Add the egg, milk, vanilla and melted butter and mix well. With an electric whisk beat in the peanut butter, baking soda and the flour. Finally add the chocolate into the batter.
Pour the batter into a lined baking tin.
Place in the oven for 55 mins and once cooked remove from the tin and leave on a wire rack to cool.

Serve with an iced coffe (another lockdown cliche) and enjoy!
