Gingerbread biscuits


Hi everyone, Merry Christmas! 

I have had a few weeks off from work which has been bliss although the days leading up to Christmas I was actually so busy; crafting and baking I was really tired by the end of it! But I am not back at my desk until the 4th January so I have been taking it easy and enjoying these slow days. 

As of Boxing day, we were moved from tier 2 to tier 4 so there isn't a lot we can actually do so my days are now filled with daily walks with friends and that's pretty much it! I am not one for sitting around watching TV (unless there is a Miss Marple on) so I thought I would write some blog posts on what I have been up to if you would care to see.


Last week I made a batch of gingerbread biscuits to gift people and just for the joy of making. I don't care for gingerbread myself but I love making things it keeps my soul happy to be creative for an hour or two.

And it is the perfect excuse to wrap something else up in cellophane which gives me life.

I used this recipe here but it made far too much! You can freeze what you don't use but I didn't need that much dough.

Once you have created your mixture simply roll it out and using cutters, create the shapes you want.


I like to use a variety of all Christmassy shapes, trees, stars, candy canes, bells. They don't look like much when they are first baked but you can have all the fun with decorating them.


They are so simple to make, I should imagine it is designed to make with kids in mind.



Once you have let them cool down, the fun can really begin! I have used white icing and white chocolate to decorate, you can use what you like but this is the part to go for it and make them look super pretty!


Truth be told I did have a look on Pinterest to get the vision of how I wanted them to look, but there is no right and wrong with how to do them really and I guess if it goes wrong you can eat it and start again on another biscuit! Like I said before, this recipe made soooooo much dough you can afford to have some 'insurance' biscuits.



I was hoping to make a gingerbread house as well but I didn't in the end, I don't have cutters for one and the kits had sold out in shops everywhere! I have put a note in my diary to order one super early next year as I think they are cute to have in the house in December.
