Valentines Pancakes
Pancakes. Oh how I love them! On shrove Tuesday I would always cook the traditional crepe with lemon and sugar because I am basic (you will come to know this about me) but pancakes are not just for Shrove Tuesday! I thought it would be cute to make these for Mr Poachie on valentines day, I don't think he cared either way but nothing says 'I love you' like nutella and strawbs. He is a babe and sometimes you have got to batter up for yo' man.
Mr Poachie tries to tell me that it is pronounced 'Noo-teller'. I tell him he is wrong. We move on with our lives.
This is a BBC good food recipe, really easy to follow.
225g self raising flour
50g cocoa
1 tsp baking powder
1 tbsp caster sugar
2 large eggs
400 ml whole milk
1 tbsp oil
50g unsalted butter
Tip the flour, cocoa powder, baking powder and sugar into a large bowl with a small pinch of salt. Add the eggs and whisk until smooth. Gradually whisk in the milk until you have a smooth batter
Heat a splash of the oil and a little of the butter in a non-stick frying pan until sizzling. Cook the pancakes, using 2 tbsp batter for each, for 2 mins until bubbles start to form on the surface. Flip and cook for 2 mins more (you'll need to do this in batches). Keep the pancakes warm in a low oven while you cook.
Add toppings to serve, et voila! romance is served.
